My Favorite Haitian Style Breakfast

Eggs, Sausage or Hot Dog, with Bread


  • 2 Eggs
  • 1 Hot dog or Half of your favorite Sausage
  • 1/2 Half of an Onion
  • 1/3 of Green or Red peppers
  • 1/2 tsp of garlic powder
  • 3 tsp of Olive Oil or butter


Crack the eggs, put then in a bowl, pour in the garlic powder. Peel and chop the onions and green/red pepper, pour in the bowl with the eggs and also salt at your discretion. Mix the eggs with all in the bowl.

Heat up the stove; use a frying pan, pour the oil in the pan and make sure it’s hot first. Put in the sausage or hot dog for 3 minutes, turning so that it doesn’t burn.

Last but not least pour the egg mixture in the pan on top of the sausage For 2 minutes. If you want it scramble just keep turning it. If not just let it cook any way you like, hard, soft which ever works for you.

Soften and prepare pie crusts according to package directions. Roll out crust, if necessary, to form 2 10 circles. Place each crust on one cookie sheet, side by side, letting half of each crust extend over the side of the cookie sheet. You’ll end up folding that half of the crust over the filling.Remove sausage from casings, crumble, and brown with onion, garlic, and red bell pepper in heavy skillet. Remove from heat and drain well. Add dried basil and set aside.Beat eggs in a small bowl and add ricotta cheese. Stir into sausage mixture in skillet.
